1 package (8 oz) cream cheese, softened
2 T sugar
2 T apple juice or milk
2 T apple jelly
1/4 t cinnamon
2 packages (8.6 oz each) soft baked oatmeal cookies
6 oz milk chocolate
2 t veg. oil
1. In a medium bowl, combine cream cheese, sugar, apple juice or milk, jelly, and cinnamon. Beat on medium-high speed with an electric mixer until smooth.
2. Spread 2 1/2 T mixture over flat side of one cookie. Sandwich with flat side of second cooke, being careful not to let filling ooze out side. Repeat with all cookies and filling, for a total of 8 sandwiches. Place on a small wax paper lined cookie sheet and freeze for at least 3 hours or until firm.
3. (I just used a container of dipping chocolate from the grocery store) Combine chocolate and vegetable oil in a small microwave safe bowl. Microwave on high 1 minute. Stir until smooth, returning to microwave in 15 second increments, if needed. Remove sanwiches from freezer. Half dip in chocolate. Return to waxed paper lined sheet; return sheet to freezer. Freeze 15 minutes. Serve cold.
*For a pretty presentation, dip half of the sandwiches in white chocolate, the other half in milk chocolate.
