My New Toy!!!

I got my birthday present a month early last night, but I just couldnt resist! We went to Sportsmans Warehouse to look at a new bow for Troy and ended up getting me one instead! It is so cool! I also got my full hunting camo attire. I am an official hunter's wife now! I am really excited to start learning how to shoot and to go hunting with Troy this year! It is a bow made for women, the Diamond model made by Bowtech. Last year for my birthday I got my engagement ring and this year I got a Diamond bow, so I guess that means I will get diamonds for my birthday every year! :)

Nothing New

This week has been pretty uneventful. We have finally had a week without something to do every night and we have been LOVING it! We have actually been able to just be home after work, get a few things done, and then RELAX! We have watched movies and have been just doing nothing. We are looking forward to a fun weekend of camping with Jeremy & Crystal.

Frozen Apple-Oatmeal Sandwiches

For our neighborhood BBQ yesterday I made these delicious cookies! Here is the recipe:
1 package (8 oz) cream cheese, softened
2 T sugar
2 T apple juice or milk
2 T apple jelly
1/4 t cinnamon
2 packages (8.6 oz each) soft baked oatmeal cookies
6 oz milk chocolate
2 t veg. oil

1. In a medium bowl, combine cream cheese, sugar, apple juice or milk, jelly, and cinnamon. Beat on medium-high speed with an electric mixer until smooth.

2. Spread 2 1/2 T mixture over flat side of one cookie. Sandwich with flat side of second cooke, being careful not to let filling ooze out side. Repeat with all cookies and filling, for a total of 8 sandwiches. Place on a small wax paper lined cookie sheet and freeze for at least 3 hours or until firm.

3. (I just used a container of dipping chocolate from the grocery store) Combine chocolate and vegetable oil in a small microwave safe bowl. Microwave on high 1 minute. Stir until smooth, returning to microwave in 15 second increments, if needed. Remove sanwiches from freezer. Half dip in chocolate. Return to waxed paper lined sheet; return sheet to freezer. Freeze 15 minutes. Serve cold.
*For a pretty presentation, dip half of the sandwiches in white chocolate, the other half in milk chocolate.

Pioneer Day Celebration

On Friday we went down to the Bountiful Parade for the 24th and then went over to the park and pigged out on all the yummy carnival food. The celebration wasnt as cool as it has been in previous years, but it was still really fun. We did get to see Carmen Rasmussen from American Idol! We went with my friend Brooke and her family. We tried to go back on Saturday to eat again, but they were closing up everything when we got there at 5! Weird, huh?

My Day Off

I finally had a day off all to myself yesterday! Even though I spent alot of the day cleaning, it was still nice. I took alot of breaks to read Harry Potter before the last book comes out on Saturday. After I finished cleaning I went to Costco then I went to dinner with some of my old work buddies. It was alot fun, like always. I cant believe we have been going every month for 3 1/2 years! It's been GREAT! After dinner at Trolley Square I skipped over to Smith's Marketplace to visit my mom at work. They were having a big clearance sale and I ended up getting me and Troy some cute new clothes. It was a fun night!

Update

I went and saw the new baby (William Peter Vanderlinden) yesterday and Jen says he is really doing alot better over the last 24 hours. His left lung is working on its own, but the right one is still collapsed. Luckily, he is already off the respirator and is just on the oxygen. Even though he is doing better he still probably wont be home for another 2 weeks. :( I have posted some new pictures even though they look pretty much the same as the others. :)

A chance to have some fun...

Our plans for last night fell through at the last minute so we decided to throw the four wheeler and the dogs in the truck and head up Farmington Canyon to take the dogs swimming. They had alot of fun and the weather was perfect! It was nice to get out of the heat and enjoy a cool breeze. This was Sariah's second time going swimming and she loved it! The first time she went she loved the water, but didnt have the courage to follow the other dogs out into the deep water to fetch. But this time she was swimming like she'd been doing it all along. Now we have 2 water dogs (Missy & Sariah) and 1 runner (Ruger). Ruger enjoys the water, but was just waiting to go so he could start running again. :) It was alot of fun. Here are some pics we took while we were there.

Surprise!




Well, we got a surprise while we were sitting in the midnight showing of Harry Potter early this morning. I got a text message saying that my sister who was due August 17 was in labor and on her way to the hospital! Luckily the movie was almost over and I didnt have to miss any of it. :) (It was AWESOME by the way!) Anyways, the baby boy was born about 10:30 this morning and since he was 5 weeks early, he will be spending the next 2-5 weeks in the NICU at LDS Hospital. It sounds like the development of his lungs is the worst of his problems so he has a machine that is breathing for him while he learns how to breathe on his own. It was so sad seeing him with all those tubes and not being able to hold him or anything. Here are a few pictures along with one of Sam sitting in Mack's car seat while we were at the hospital.

I'm a new Transformers fan!


Hey Everyone! Call me a dork, but I just wanted to take a minute to share with everyone my new love of Transformers!
